T is for Tacos for The Kids Cook Monday

With hubby away for work, a simple dinner was in order for the 3 girls of the threefootcooks household.  Bee's latest choice alternate between crunchy noodles and tacos.  So tonight we chose tacos.

We usually make a mexican style beef mince for filling our tacos.  And we have also had spiced fish tacos and vegetarian tacos made with a mexican bean mix.   Hubby prefers using soft white tortillas for his tacos shells while us girls like the crunch of the hard corn taco shells.

Nothing too difficult with this version however.  I had some leftover roast chicken that I cut into small pieces and reheated.  Bee helped by grating tasty cheese and carrot and washing the lettuce leaves.  We warmed the taco shells in the oven as per the packet directions and added sour cream and taco sauce.

A very simple but healthy and very tasty dinner.

What is your favourite version of tacos to have with your child?
